How long does ghee last? Shelf life and storage

Ghee is one of the longest-lasting foods in an Indian kitchen. Because almost all the water and milk solids are removed when it is made, there is very little for bacteria to grow on.
How long does ghee last?
Unopened, good ghee keeps for up to 12 months. Once opened, it stays fresh for several months if stored well. Many families keep it at room temperature for daily use without any problem.
Does ghee need to be refrigerated?
No. Ghee does not need a fridge. Room temperature in a cool, dark place is fine. Refrigeration will make it very hard and is not necessary, though it does no harm if you prefer it.
How to store ghee
- Keep it in a clean, dry, airtight jar. Glass or steel is ideal.
- Always use a dry spoon. A single drop of water or a wet spoon is the main cause of ghee going off.
- Store away from direct sunlight and the heat of the stove.
Why does ghee go solid in winter?
This is completely normal. Ghee sets solid in cold weather and turns liquid in the heat. It is a sign of natural fat, not a defect. It does not affect quality.
How to tell if ghee has gone bad
Fresh ghee smells nutty and pleasant. If it develops a sour or rancid smell, tastes off, or grows any mould from moisture, discard it.
